Sun King unveils restaurant lineup for Carmel distillery, tap room

Sun King Brewery on Tuesday announced plans to fill the food hall in its soon-to-open tap room and distillery in Carmel with four independently-operated eateries.

The $5 million, 15,000-square-foot facility, which is expected to open July 2 along the Monon Greenway in Midtown Carmel, will feature four, 100-square-foot food stalls, each with a small kitchen, service counter and menu boards.

Those booths will be operated by:

—    La Margarita: A Mexican restaurant that got its start in Speedway in 1986, La Margarita opened its current location in Fountain Square in 2011. Its menu includes tacos, salads, burritos, homemade salsas, creamed corn poblano aioli and queso fresco.

—    Oca: Developed by Chris Eley, owner of Indianapolis eateries Goose the Market and Smoking Goose, Oca already operates a food booth in Sun King’s downtown Indianapolis tap room. The menu includes soft Bavarian pretzels with pimento beer cheese; tasting boards with unique sausages and cheeses; and an array of sandwiches, including the Batali, named the top sandwich in the nation by Bon Appetit magazine.

—    Pi: The food-truck operator will offer brick-oven pizza and seasonal salads. One of its pizzas, the Indiana Corn Pi, features garlic sauce, sausage, corn, spinach, caramelized onions, jalapenos, and mozzarella and provolone cheese.

—    Beast: The food-truck operator specializes in gourmet burgers and hand-cut fries. Its Game Changer burger features a quarter pound of beef, Chinese five-spice seasoning, cookie butter and spicy Asian slaw on a toasted brioche bun.

Clay Robinson, co-founder of Sun King, said food halls are growing in popularity throughout the United

“Think of our new food hall like a food court in the mall—but totally modernized with local, independent restaurants serving diverse, fresh food quickly,” he said in written remarks. “The entire experience is meant to provide a destination where friends can gather to enjoy fresh, handcrafted beers and cocktails paired with fresh, handcrafted meals.”

The Carmel distillery is set to produce and serve small-batch spirits such as artisan moonshine, agave spirit, gin, rum, and whiskey. The tap room will offer a variety of Sun King beers on 32 taps.
